Healthy Fudge (uses carob powder)

If fudge can be “healthy” at all, then this has to be it. Our family doesn’t normally consume hydrogenated fats (and of course Jif has them), but this is really a treat once in a while…

HEALTHY FUDGE

  • 1 cup honey
  • 1 cup Jif creamy peanut butter
  • 1 cup carob powder
  • 1-2 tsps. pure vanilla extract
  • Optional:  Couple handfuls raisins or chopped walnuts

In a medium saucepan, heat honey until very thin. Add peanut butter, then vanilla extract and blend well. Gradually add carob powder, then the raisins. Mixture will become very dark and shiny!

Press into oiled (probably not necessary) 8″ pan. Refrigerate and cut into squares when cool. (note: Keep refrigerated so pieces don’t get sticky — due to the honey).

Great tasting, great textured stuff!
