Simple Spice Cookies

Simple Spice Cookies

  • 1/2 cup butter
  • 1/2 cup shortening
  • 2 1/4 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon cinnamon
  • dash of nutmeg

Beat margarine and shortening. Add half the flour, plus all remaining ingredients. Beat well, then gradually mis in the remaining flour. Shape into 2 logs and wrap in waxed paper or plastic wrap. Chill at least 2 hours, or freeze. When you’re ready to bake, slice cookies about 1/4 thick and bake at 350 for 8 minutes, longer if frozen.

Variation:  Reduce flour to 1 3/4 cups and add 1 c quick-cooking oatmeal. When I do this, I add 1 cup of flour at the beginning, then when it’s time to add in the remaining flour I add 3/4 cup flour and the oatmeal.
