I’d try the bean pot pie one first, as an introduction to beans, as there are so many other flavors in it.
BEAN POT PIE
- 1 can cream of potato soup
- 1 can mixed vegetables, drained
- 1 can black beans, rinsed and drained
- 1/2 c. salsa
- 1/2 tsp. pepper
- shredded cheddar cheese, optional
- 1 (9-inch) frozen pie crust, thawed
Combine first 5 ingredients. Spoon into prepared pie crust. Sprinkle top with cheddar cheese, if desired. Bake at 375 degrees for 30-40 minutes (until done).
QUESADILLA CASSEROLE
- 1 can vegetarian or fat-free refried beans
- 1 can (8 oz.) tomato sauce
- 1 can (4 oz.) chopped green chilies
- 4 (8 inch) flour tortillas
- 2 c. shredded cheddar cheese
- 1 c. chopped onion
- 1 tsp. each: cumin
- chili powder
- garlic powder
- onion powder
Combine refried beans, tomato sauce, green chilies, and spices. Mix well. Grease an 8 inch round cake pan or casserole dish. Place 1 tortilla in the pan. Spread 1/4 bean mixture over the top. Repeat with 2nd tortilla and bean mixture. Sprinkle with 1 c. cheese and 1/2 c. onion. Add 3rd tortilla. Spread with 1/4 bean mixture. Top with 4th tortilla, 1/4 bean mixture, remaining cheese, and onion. Bake, uncovered, at 350 degrees for 35-40 minutes or until cheese is bubbly. Let cool slightly and cut into pie-shaped wedges to serve.
BAKED BEAN ENCHILADAS
- 1 (28 oz.) OR 2 (16 oz.) cans of Bush’s vegetarian baked beans
- 2 T. chili powder
- 1 tsp. oregano
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1 tsp. onion powder
- 2 c. rice, cooked
- 10 10-inch flour tortillas
- 8 oz. cheddar or Monterey Jack cheese, shredded
- salsa
Combine beans and seasonings. Cook over medium heat for 5 minutes. Meanwhile, cook the rice. Stir the cooked rice into the beans mixture. Evenly spoon mixture in center of each tortilla; roll and place seam side down in a greased 9×13-inch pan. Spoon salsa over the middle of each tortilla and then sprinkle cheese over the salsa. Cover and bake at 350 degrees for 25-30 minutes

I saw it on the label of the Bush’s vegetarian baked beans and made the recipe, loved it, and then forgot to save the recipe. Is this the same recipe, perhaps, or did you make this one yourself?
