I just got this recipe and have yet to try it but I thought it sounded good. I think it would make a really nice gift with a gourmet type flair, especially if packaged up nicely.
BAILEY’S IRISH CREAM FUDGE

- 4 1/2 Cups sugar
- 1 12 oz can of evaporated milk
- 1/2 lb butter
- 2 12 oz pkgs of milk chocolate chips
- 1 12 oz pkg semisweet chocolate chips
- 2 7 oz jars marshmallow cream
- 2 tsp vanilla
- 2/3 Cup Bailey Irish Cream
- 2 Cups chopped nuts
Follow directions EXACTLY.
Put chocolate chips, marshmallow cream, vanilla, Bailey’s and nuts in a VERY large bowl. Set aside for later. Bring butter, sugar and milk to a boil and then cook slowly for exactly 11 minutes (don’t ask why – just works), stirring CONSTANTLY. Pour milk mixtures over the other ingredients and stir slowly to blend. DO NOT USE MIXER!! Pour into a buttered 9×13 inch pan and chill very well. Cut cold.
You can use both the pieces will still be good sized. You can also line the pan with foil and remove from pan to cut, since it can be hard to get out of the pan otherwise. It stays kind of soft. Will never get very hard.
