Here’s a couple of homemade soup recipes that we enjoy:
CHEDDAR CHOWDER
- 3 cups salted water
- 3 chicken bullion cubes (or use veggie stock)
- 4 peeled & cubed potatoes
- 1 cup chopped carrots
- 1/2 medium size onion
Boil until tender.
- 1/3 cup margarine
- 1/3 cup flour
- 4 cups milk
Melt butter, add flour and cook until starts to brown, add milk slowly, stirring constantly, until thickens.
Add 3 cups of shredded cheddar cheese to the thickened milk – then pour the cheese-milk into veggies and stir – GOOD soup! (We vary the cheese according to what’s on hand.)
BROCCOLI O’LE SOUP
- 1/2 cup butter
- 3/4 cup flour
- 2 quarts milk
- 2 cups grated cheese – cheddar, colby, use your imagination
- 2 10-ounce pkgs chopped frozen broccoli drained (or use fresh)
- 2 tsp herb seasoning
- 1 tsp dill weed
- 1/2 tsp pepper
- 1 T Jalepeno juice
Melt butter in 5 quart saucepan, stir in flour, let it start to brown, add milk, heat over medium heat, but don’t let it boil, stirring constantly, turn heat down to med-low when it starts to thicken. Stir in cheese until melted, add the rest of the ingredients, and let it simmer 1 hour on low heat,stirring occasionally.
I’m going to have to make a big pot of soup for dinner, this sounds GOOD!
